This bread is a nice accompaniment to soup, but does not stand on its own.
- 1-1/2 cup brown rice flour
- 1/2 cup soy flour
- 1 tablespoon non-alum baking powder
- 1/2 teaspoon salt
- 1 cup enchilada sauce
- 1 cup warm water
- 2 tablespoon unrefined olive oil
- 1 cup grated cheese
Mix the dry ingredients. Set aside.
Mix the liquid ingredients. Combine the two mixtures. Stir quickly.Pour into a well-oiled 8 x 8-inch cake pan.Bake at 375-degrees for 25 - 35 minutes or until done.Note: May use salsa instead of enchilada sauce...and the wheat free bread recipe is ready to serve...enjoy !
